For Christmas Trisha got me this thing called a "Bain Marie" from Williams Sonoma. It's effectively a single pot double boiler. Unlike traditional double boilers that require double the pots...this is all in one. What you do is pour the water into a little spout by the handle. The pot is effectively hollow so the water goes inside.
