Was feeling the urge to do some baking over the weekend, but given my current pace, was unable to actually get to any baking on Sat or Sun but was able to whip up a batch on Monday night. It's awesome because a single batch of dough makes so many cookies, that I now have a log of cookie dough in the freezer. There is so much shit in the freezer it is kind of amazing...I think we have enough to eat for a month in there.
These cookies were just kind of thrown together by what I had in the pantry. I took basic chocolate chip cookie dough and mixed in chopped nuts, white choco chips and dried cherries. I have some dried blueberries sitting around too...wonder what those would go well with.
Recipe
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
2/3 cup brown sugar
2/3 cup granulated sugar
1 egg room temperature
2 tablespoons milk
1 1/2 teaspoons vanilla
Pre-heat oven to 350 degrees
Cream butter and both sugars together for about 3 minutes, add milk, vanilla and egg and continue to mix on medium speed until light and fluffy.
In separate bowl mix dry ingredients. Add slowly to wet mixture and mix thorougly.
Stir in about 1 cup each of chopped pecans, chopped dried cherries and white chocolate chips or any other combination you would like to try.
Using a small ice cream scooper or tablespoon, drop cookies onto a baking sheet and bake for about 10-12 minutes or until lightly golden. Let cookies rest for a minute or two on the baking sheet, then transfer to cooling rack to cool completely.
